Viviana's Smachna Kapusta

1 Large jar of Kapusta

1 Large onion chopped

1 or 2 cloves of garlic chopped

1 packet bacon bits/ pancetta or chopped Wiejska

¾ tbsp 'Maggi' liquid seasoning

1 tbsp 'Vegeta' (a Polish food seasoning made up of dried vegetables)

a good sprinkling of pepper

If you can't get hold of 'Maggi' and 'Vegeta'

I sometimes add 1 or 2 tbsp of gravy granules.

Rinse the kapusta thoroughly, then bring to the boil

in clean water, for 10-15 mins.

While the kapusta is boiling, fry the onion,

garlic and bacon bits until very brown.

Drain the Kapusta then bring back to simmer adding the onions etc,

then all the seasonings.

Make sure you give it a really good stir,

and keep stirring occasionally,

making sure there is a little liquid

in the base so that it doesn't burn.

I always think the longer it simmers the

better it is, so I simmer for upto 2 hrs

and obviously, the more jars of Kapusta,the longer you simmer.
