Vera's Varenyky

DOUGH MIXTURE

Mix 2 cups flour with 1 teaspoon salt

Add 1 large egg and two thirds of cup of cool water.

Knead lightly and over with kitchen towel to rest.

POTATO/CHEESE FILLING

Mix together mashed potato (approx. 41g) and

Curd or feta cheese (5oz)

Season with salt and pepper

Fried onions to garnish.

TO FORM THE VARENYKY

Roll the dough thin, cut rounds with a cutter or a medium size glass.

Hold each round pastry in the palm of your hand and place a teaspoon of the potato/cheese filling in the middle.

Press the sides of the dough to seal the edges. (These should resemble small Cornish pasty shapes)

Place on a kitchen towel or tray and cover.

COOKING THE VARENYKY

Boil a large pan of water, add salt for taste.

Add varenyky few at a time until they have risen to the top

(Usually 5 mins or so)

Remove from pan with a colander or spoon with holes allowing the water to drain.

Place cooked varenyky onto a plate and coat with fried onions in butter/margarine and bacon bits (optional).

Place a spoon of sour cream on the side of the plate (optional)
