Varvara's Cheesecake
For the base
9 oz crushed Digestives
3 oz melted margarine
For the filling
2x 200g tubs of full fat soft cheese
397g tin of Carnation condensed milk
Finely grated zest and juice of 4 limes
In a large pan melt the margarine and mix in the
crushed Digestives.
Press in to base of 9" loose-bottomed cake tin
and chill for 10-15 mins.
Whisk cheese, condensed milk, lime zest
and juice for 5 mins until thick
and creamy/glossy.
Spoon over biscuit base and chill for
at least 1 hr, or preferably overnight.
