Halyna's Holubtsi
Remove hard core of 3lb cabbage, simmer,
remove outer leaves as they wilt.
Do not over cook.
Line a casserole dish with smallest and damaged leaves.
Fry 2oz of mushrooms and onions in a pan.
Cook 2 cups of rice in vegetable stock.
When cooked add mushrooms and half of the onions and mix.
Form holubtsi* and arrange in layers in a casserole dish.
Add a small amount of stock to the casserole dish and bake for an hour at 350 degrees.
Once cooked and plated up, pour over the remaining onions.
*To make holubtsi:-
Place 1 tablespoon of rice mixture on a leaf, fold sides towards centre, starting at the thin outer edge, roll up loosely.
They should look like small parcels.
