Baba's Borsch
1 chopped onion
2 medium beetroots
1 carrot
1oz mushrooms
1 medium potato
vegetable stock cube
garlic
tomato puree
lemon juice
vinegar
seasoning
Chop and fry onions until golden brown
Grate beetroot, carrot and potato and place in a saucepan of vegetable stock, cook for 5 mins.
Then add the onions and garlic.
Season well with salt and pepper to your taste.
Add tomato puree, lemon juice and vinegar.
Always taste your soup as you go along adding more seasoning as required.
Once cooked, spoon into dishes and add some sour cream (optional).
